Dum Pukht (Kaddi Kabab)

Dum Pukht is translated as 'Dum' meaning 'breathe in' and 'Pukht' meaning 'to cook'. It essentially refers to letting the dish breathe in its delicate aroma or juices to make it extra flavourful. Balochi Kaddi Kabab as called Dum Pukhth is the meals and delicacies of the Baloch people from the Balochistan province of Pakistan, the Sistan and Balochistan province and Balochistan province of Afghanistan. Baloch meals have a unique flare to them in comparison to the numerous cuisines of Pakistan and Iran.

Basically the history of Dum Pukht (Kaddi Kabab) is when you consider that from historic times, the people of Balochistan were normally fond of meat and in that time the ordinary people couldn’t come up with the money for this meal only the royal or the nobleman of the vicinity may want to come up with the money for that, and it was cooked for the unique visitors of the wealthy people, however now Dum Pukht (Kaddi kabab) is the a part of Baloch culture, and now middle class also can come up with the money for it, in the event that they go for day trip or picnic they take Dum Pukht (Kaddi Kabab) with them and revel in the scrumptious meal there.

Dum Pukht is prepared with meat and it's cooked in fats. Khaddi Kabab is a dish in which the dish is cooked in a way that they cook a whole lamb or goat over a fire. First of all, the cook applies some traditional spices at all the body of goat and let the goat in vinegar for 2-3 hours so it absorbs all the spices in it so the next step is to put some fire in mud stove after letting the fire when there is just heat of the fire they will place the goat into the mud stove and then cover it from all the sides and letting the goat in the heat of the fire for 3-4 hours. Guess what after 3-4 hours the delicious Khadi Kabab is ready for meal. Usually there is raw rice in the stomach of the lamb and the fats of the lamb cook the rice.
